We stayed at Tranquility Bay as a family of four for 4 days and had a wonderful time. It's a beautiful secluded resort with a well maintained nice sandy beach. We came here for the snorkeling and it was a great place for our 8&9 year old to learn. There are a few small reefs (~20-30ft wide) that you can swim to from the beach. The water remains shallow for quite a distance and there are some sand bars you can stand up on. There is also an outer reef ~500 feet from the beach that can be reached by Kayaks (provided by the resort). What is special about Tranquility Bay is that the outer reef is very close to shore, whereas further south along Ambergris caye the reef is over 1km away from shore. We did kayak out to the reef and the channel that opens between the outer reef and the protected shallows. But snorkeling this area is challenging for a novice.
The most memorable snorkeling we did was a boat ride tour the staff took us on to Mexico Rocks/Stingray City.
The entire staff were very hospitable and made our stay enjoyable. Manager Axcel has done a great job. Sitting on the deck for meals and taking in the view, the undulating waves, fish and sunset was unsurpassed. A bonus was fly fishing from the dock - our 9 yo was thrilled to cash 3 fish in the span of 3 hrs! They will even serve what you catch!
Downsides: the resort is far from San Pedro (30min boat ride $225 return, 1hr by car?$150) and secluded. 6 meals in a row of chicken fingers was a bit much for our kids.
