Begin your experience by meeting your guide at a casual sushi restaurant in Kofu. Be welcomed by your guide and introduced to the chef who will lead the class.

Watch as the chef demonstrates hand-shaping techniques in front of you, showing how to press and form rice, position fish, and assemble each piece. Then, replicate each step yourself, working through nigiri and rolls at your own pace.

Your guide will translate the chef’s instructions and encourage you to ask questions directly, so the session moves as a genuine exchange rather than a one-way demonstration.

By the end of the 90-minute class, shape a full plate of sushi with your own hands. Sit down and eat the pieces you made, finishing the session with a direct connection between the effort you put in and the food in front of you.
