This 1-hour guided visit immerses you in the heart of Reims' biscuit-making tradition and reveals the secrets of making the legendary Biscuit rose de Reims.
For more than 260 years, Maison Fossier has preserved a unique expertise recognized even by the royal courts. In 1775, its biscuits were present at the Coronation of Louis XVI in Reims, and the biscuit factory became a supplier to the king.
Today, Fossier is the only biscuit factory in Reims that still produces these iconic pink delicacies, with over 100 employees.

The Biscuit rose: a legend born out of a happy coincidence
Around 1690, bakers from Champagne created a recipe to take advantage of the heat of the bread oven after baking: the “bis-cuit” (baked twice) of Reims was born!
The characteristic pink color comes from an accident: to hide the brown marks left by the vanilla, the baker added a natural dye made from cochineal.
Since then, the recipe has remained unchanged, as has the double-baking method.
Label of excellence: Maison Fossier was awarded the “Living Heritage Company” label in 2006, recognizing its exceptional know-how.
Champagne tradition: The Biscuit Rose is traditionally enjoyed dipped in champagne or red wine.
