Discover the secrets of Puglia's age-old cheese-making tradition on an authentic tour in Martina Franca, Puglia. During this unique experience, you will visit a genuine, family-run local dairy and witness firsthand every stage of the production of typical Puglian cheeses—from milking to serving.
✅ What you'll do during the experience:
We begin our guided tour of the production facility.
You will be taken to the heart of the plant, where the master cheesemakers will demonstrate the entire cheese-making process: from the curdling of the milk to the stretching of the mozzarella, to the maturation of caciocavallo or ricotta forte.
Discovering traditional methods
You will learn how to distinguish between the different types of Apulian cheeses and the traditional techniques still used today. You will learn what makes a “raw milk” cheese so special and the aging times for each variety.
️ Guided tasting of local cheeses
After your visit, a generous tasting of locally produced cheeses will be waiting for you: fresh mozzarella, burrata, caciocavallo, ricotta, scamorza, and other aged cheeses, accompanied by extra-virgin olive oil.
