After a Sunday tour of Pasto’s traditional churches, where the tradition of the “empanada de iglesia” (church empanada) is still alive, a keeper of this tradition will guide us through the historical and social significance of this iconic dish in our cuisine, from the traditional empanadas made with aged cornmeal to those made with wheat flour, in a hands-on class that also discusses chili peppers as the perfect pairing.
