We'll meet at a place in the center and head to a market so we can shop together.
Then we'll go to our town, which is located 20 minutes from downtown.
We'll start by having chocolate with bread. We'll then prepare our breakfast: tortillas, memelitas, tetelas, empanadas, as well as three traditional molcajete sauces. In the process, we will explain the flavors, techniques, and traditions related to the ingredients and dishes.
Now it's time to enjoy breakfast! We'll talk about Oaxacan culture and the history related to gastronomy.
We will now prepare our lunch: yellow mole, green mole, black mole, or coloradito.
The goal is to understand the flavors, names, differences, and how ingredients can be substituted when we don't have them on hand.
