What you can expect

  • Your experience begins with an interactive visit to the traditional market of Teotitlán del Valle, accompanied by a local traditional cook who will help you select the key ingredients for your dishes. Together, you’ll prepare two suggested specialties, such as mole and soup, or two traditional dishes chosen by the group, including tamales and other regional recipes. As you explore the ingredients, your cook will share the stories behind them, explain their traditional uses, and introduce you to the techniques and secrets that have been passed down through generations of Oaxacan cooks. Feel free to ask questions and discover the traditions that give Oaxacan cuisine its unique character. You’ll also prepare a traditional drink, such as chilacayota squash water or a refreshing beverage made with seasonal fruit. And there’s something even more special: you’ll have the opportunity to learn how to make handmade tortillas, just as they have been prepared in Oaxacan homes for generations. After selecting your ingredients, we’ll head to the cooking workshop, where experienced local cooks will guide you step by step. You’ll receive your own apron and work alongside the group, preparing and organizing the ingredients for each dish. The experience ends around the table, where you’ll sit down to enjoy a delicious meal and a refreshing drink, sharing the flavors, stories and laughter of Oaxaca with your fellow participants—and tasting the dishes you prepared with your own hands. More than a cooking class, it’s a chance to connect with Oaxaca through its people, traditions and unforgettable flavors—and to take home a memory you can truly taste.
