Step into the heart of Italian tradition with an exclusive visit to a historic Parmesan cheese factory near Modena. This guided tour offers a behind-the-scenes look at the meticulous process of making Parmigiano Reggiano, one of the world’s most celebrated cheeses. You'll learn every step, from the first drop of milk to the perfectly aged wheel of cheese, and witness the craftsmanship that has been passed down through generations.

The tour begins early in the morning, with the recommended start time being 8.30 AM, allowing you to catch the most critical part of the cheesemaking process. In the main production room, you’ll see the copper cauldrons where the milk is transformed into curd, and if you arrive early enough, you’ll witness the exciting moment when the fresh cheese wheels are lifted from the vats. After 9:15 AM, you can still observe the fascinating steps without the production workers present, while your guide explains the process.

As the tour progresses, you will observe the separation of the whey and the creation of the solid cheese, and learn about the months of patient aging that follow. You’ll pass through the salting and resting rooms, where the cheese wheels absorb the perfect amount of salt for flavor. Finally, the tour leads to the impressive aging warehouse, home to rows upon rows of Parmigiano Reggiano wheels maturing to perfection. Here, you’ll discover the significance of different aging periods—12 months, 24 months, 36 months, and beyond—and why they create distinct textures and flavors.

After this informative tour, you'll have the opportunity to savor the fruits of this extraordinary craftsmanship. A tasting session follows, where you can sample three different ages of Parmigiano Reggiano.
Paired with these exceptional cheeses are locally produced wines, adding a layer of elegance to your tasting experience.

To enhance the experience further, you’ll enjoy freshly baked tigelle, a traditional bread from the region, alongside a selection of local cold cuts. This delightful combination of food and wine allows you to fully appreciate the rich culinary traditions of Modena and the surrounding area.

The entire visit, including the tour and tasting, lasts approximately one hour, making it a perfect stop on your Italian itinerary. Not only will you leave with a deeper appreciation for Parmesan cheese, but you'll also have the chance to take photos among the iconic cheese wheels, creating lasting memories of your visit.
