You'll be served a 3-course meal with several choices from the menu:

• Lyon-style cured sausage, toasted Viennese bread, rocket emulsion and spring greens

Green asparagus velouté, poached egg, golden croutons, green tarragon oil

Spring salad, medley of seasonal vegetables (raw and cooked) with pecorino dressing

Baby cuttlefish escabèche, crispy anise-flavoured canistrelli-style tuile

Choice of Main Courses
•Roasted chicken supreme, rich jus with green olives and sun-dried tomatoes, potato rösti and young vegetables

Catch of the day, tomato marinade with extra virgin olive oil, tangy sweet potato purée and lightly sautéed vegetables

Slow-cooked pork shoulder stuffed with fresh herbs, potato rösti and a rich sage jus

Whole sea bream served “portefeuille” style, tangy sweet potato purée and lightly sautéed vegetables (supplement €8)
