The Maceration Ritual is a slow sensory experience set within the quiet Istrian countryside, surrounded by wild herbs, stone, an olive tree and the rhythm of the land itself. Far from crowded beaches, tourist routes and noisy restaurants, guests are invited into an intimate ritual centred around scent, atmosphere, touch and slow creation.

Two different rituals unfold each day.

Golden Hour begins in the warmth of the late afternoon, guided by softer herbal notes of lavender, rosemary, fig leaf, immortelle and lemon verbena.

Under the Stars unfolds through candlelight, deeper aromas, local wine and the slower atmosphere of the Istrian evening, with bay leaf, sage, thyme, fennel and rose buds.

The ritual moves gently through carefully prepared stages: arrival into the space, the introduction of each herb through scent and story, the creation of a personal maceration, and finally a slow shared table of local food and wine. Guests are guided through a selection of oils and herbs before creating their own bottle to take home, continuing to evolve long after the ritual itself.

Seasonal food pairings are woven into the experience: lavender with goat cheese and honey, rosemary with focaccia and prosciutto, fig leaf with fresh figs and gorgonzola, immortelle with red fruit preserves and fresh local cheese, lemon verbena with ricotta and lemon cake.

Seasonal food pairings may naturally vary depending on availability and the season itself. Every element reflects the flavours and atmosphere of Istria.

There are no formal workshops or tourist presentations, only presence, ritual and the feeling of being temporarily removed from the outside world.

As the maceration slowly deepens over the following weeks, the experience continues to live through its evolving aroma, flavour and memory.

The ritual lasts approximately two hours.
