This experience is a sensory journey into the heart of Extremadura, where tradition and flavor come together at the Doña Leonor de Alburquerque Cheese Dairy. The itinerary is as follows:
• Welcome and Origins: We'll start the tour at the entrance to the cheese factory, where we'll give a brief introduction to its history and its commitment to artisanal production.
• Immersion in Production: We'll tour the production rooms to learn firsthand about the process of transforming goat's or sheep's milk. Stages such as curdling, cutting the curd, and manual pressing in molds will be explained.
• The Silence of the Cellars: We'll visit the aging chambers, a place where time and humidity work their magic. Here, we will learn how to distinguish between the different natural rinds and the daily care (turning and brushing) that each piece receives.
• Guided Tasting of “The Essentials”: The visit ends with a food tasting of its star products. We'll taste a selection of their most popular cheeses, paired with a glass of local wine to enhance the nuances.
• Wrap-up and Free Time: The tour ends at the cheese shop approximately 1 hour and 30 minutes after the start, where guests can purchase their favorite products if they wish.
