ravelers will navigate the canals of Xochimilco aboard a traditional local boat called a cayuco, guided by a biologist with extensive birdwatching experience and in-depth knowledge of the area. Binoculars and a bird identification guide will be provided upon request. They will also visit a chinampa (a traditional agricultural island) cultivated entirely using organic methods. Upon arrival, they will be welcomed with organic coffee, tea, and amaranth cookies before continuing their birdwatching journey. On the return, they will enjoy a meal prepared with locally grown ingredients and traditional recipes, including chinampa salad, corn tlacoyos filled with beans and/or fava beans, or chicken fajitas topped with almond mole from San Pedro Atocpan, served with Mexican red rice and traditional pot-cooked beans.
