What you can expect

Welcome!

The first step will be to show you the ingredients you can find in Oaxacan homes. One of the advantages of our experience is that we have a garden with organic herbs and chiles. We make quesillo and fresh cheese every day.

My son Baldo will share his knowledge about mezcal, and we'll have a tasting where you can sample as much as you like, along with fresh water, soft drinks, and juices. Snacks? Of course, but you have to do it the Oaxacan way, which means gusanos, chicatanas, and chapulines.

Have you heard about the metate and how tortillas are made by hand? In addition to tortillas, we'll make tetelas, memelas, and tlayudas. We'll make different sauces using seasonal ingredients, all cooked on a comal, firewood, and charcoal embers. Mole is emblematic of Oaxacan cuisine, and we'll cook one of the seven moles using the metate. You can't leave without trying the black mole, water chocolate, pot coffee, ice cream, and a delicious cake.

Everyone will participate in the process, cutting, grinding, making sauces, and of course, eating. Remember, when visiting a home in Oaxaca, you must come with an empty stomach.

Classes are available in English and Spanish. We offer classes for vegans and vegetarians, as long as you let me know in advance. I'm excited to teach you all about Oaxacan cuisine.
