Begin your tour at Matsumoto Castle, known for its black lacquered exterior. Built in the 1590s during Japan's Warring States period, the fortress was designed for defense: steep stairs, narrow passages, and gun ports throughout the main keep. Its purpose shifted after the wars ended. Around 1633, feudal lord Naomasa Matsudaira added the tsukimi yagura, a moon-viewing room, transforming part of this military fortress into a space for contemplation and ceremony.

The tsukimi yagura opens on three sides to frame the night sky and the moat below. The saying goes that from this room, you can see the moon three times: in the sky, in the moat, and in your cup of sake. The tradition connects seasonal ritual, aristocratic leisure, and sake's longstanding role in Japanese culture, well before the modern era.

From the castle, the route leads to Nakamachi Street, once the main commercial artery of Matsumoto's castle town. During the Edo period, it sat along the Zenkoji Kaido, a route connecting Zenkoji Temple to Nagoya and Kyoto, where travelers stopped at inns and wholesale dealers traded sake and kimono. The tour pauses at Kurassic-kan, a former sake brewery dating to 1888 and a well-preserved example of late 19th-century architecture combined with early Meiji-era design elements that reflect Japan's gradual opening to Western influence.

The tour concludes with a sake tasting. Matsumoto has long supported sake production, fed by a network of spring wells drawing from mountain runoff that surrounds the city. That water, valued for its clarity and mineral balance, plays a direct role in fermentation, shaping the texture and flavor of the finished product. Combined with locally grown rice, it forms the foundation of a regional brewing tradition that has kept sake production rooted in this part of Nagano for centuries.

Your guide will walk you through a tasting of several sake varieties, each reflecting different rice strains, fermentation methods, and aging processes. Between pours, they'll explain how water quality, seasonal brewing cycles, and rice polishing ratios shape what's in your cup. The tour ends here, with time to sit, sample, and understand how sake remains part of daily life in Matsumoto.
