Your guided visit starts under the majestic canopy of a 300-year-old umbrella-shaped mulberry tree, a symbolic living monument that tells the story of sericulture and the intertwined heritage of local crafts passed down through generations.
Step inside the prosciutteria one of the rarest of its kind, where prosciuttos, pancetta, and other cured meats are dried naturally using the pure Karst air and the cooling Bora wind. Experience firsthand how premium cuts are matured on wooden racks, with every stage of the process monitored manually, just as past generations perfected it. The unique climate, untouched by artificial methods or smoke, allows the meats to develop rich, authentic flavours.
As you explore, learn about the family’s story and heritage, from the pioneering work of Franc Ščuka, who formalised prosciutto curing methods in the 1960s to the present day, where the Ščuka family continues to uphold and share their passion for traditional craftsmanship.
