While its culinary influences are widespread \u2013 Chinese, Thai, Khmer, French and Indian \u2013 and reflect the country\u2019s rich history, Vietnam food is very distinctive. Vietnamese cuisine is fresh, interesting and my personal favourite of anywhere in the world.<\/p>\n<p>For the purpose of discussing food in Vietnam, it\u2019s best to roughly divide this long, narrow country into three areas \u2013 the north, middle and south. While well-known dishes are widespread throughout the land, some are distinct to their region.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-5406\" src=\"https:\/\/www.expedia.com.my\/stories\/wp-content\/uploads\/2022\/07\/hanoi-vietnamese-food-800x450-1.jpg\" alt=\"Vietnamese Food\" width=\"800\" height=\"450\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-5065\" src=\"https:\/\/www.expedia.com.my\/stories\/wp-content\/uploads\/2022\/07\/food2-800x41-1.png\" alt=\"food2\" width=\"800\" height=\"41\" \/><\/p>\n<h2>Vietnam Food in Hanoi and the North<\/h2>\n<h4>Major Influence: Chinese and French food<\/h4>\n<p>In the north, including <a href=\"https:\/\/www.expedia.com.my\/Hanoi.d1428.Travel\">Vietnamese capital, Hanoi<\/a>, and popular tourist destination, <a href=\"https:\/\/www.expedia.com.my\/Flights-To-Halong-Bay.d6024117.Travel-Guide-Flights\">Ha Long Bay<\/a>, food is influenced more by its northern neighbour China compared to down south, with soy sauce added to many dishes. Its cooler climate is also reflected in the cuisine and the local fare has less heat due to a preference for black pepper rather than chillies. However, similar to other parts of the country, limes, fish and fish sauce are frequently used for that distinctive Vietnamese flavour.<\/p>\n<p>In addition to established restaurants, food stalls and street kitchens are everywhere and it\u2019s well worth trying these for some cheap and tasty food.<\/p>\n<h3>Cheap Vietnamese Street Food in Hanoi<\/h3>\n<p>In Hanoi, visit the restaurants and stalls around the city\u2019s <a href=\"https:\/\/www.expedia.com.my\/Hanoi-Old-City-Gate-Hanoi.d6268305.Place-To-Visit?rfrr=TG.Destinations.City.POI.4.1\">Old Quarter<\/a> for some of the best value-for-money options. There\u2019s also a wide selection of eateries around Hoan Kiem Lake, with pricier restaurants found in the French Quarter.<\/p>\n<h4>Cha Cha La Vong<\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" title=\"Cha Cha La Vong - Vietnam food\" src=\"https:\/\/www.expedia.com.my\/stories\/wp-content\/uploads\/2022\/07\/cha-ca-la-vong-hanoi-food.jpg\" alt=\"Cha Cha La Vong - Vietnam food\" width=\"800\" height=\"532\" \/><span style=\"font-size: 8pt;\"><em>Cha cha la vong \/ CC by 2.0 \/\u00a0<a title=\"Go to Tri Nguyen's photostream\" href=\"https:\/\/www.flickr.com\/photos\/bao_tri_nguyen\/\" target=\"_blank\" rel=\"nofollow\">Tri Nguyen<\/a><\/em><\/span><\/p>\n<p>One Hanoi speciality is <strong><em>cha ca la vong<\/em><\/strong> or Hanoi turmeric fish. This delicious grilled fish dish is marinated \u2013 often for hours so the flavours are fully absorbed \u2013 in garlic, dill and turmeric and cooked in front of you on an individual stove. It originated in the famous Cha Ca La Vong restaurant in the Old Quarter, which is a one-dish-only joint, but there are now many versions served all over Hanoi.<\/p>\n<h4>Bun Cha<\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-5407 size-medium\" title=\"Bun Cha, vietnamese noodles\" src=\"https:\/\/www.expedia.com.my\/stories\/wp-content\/uploads\/2022\/07\/bun-cha-800x534-1.jpg\" alt=\"Bun Cha, vietnamese noodles\" width=\"800\" height=\"534\" \/><span style=\"font-size: 8pt;\"><em>Bun Cha \/ CC by 2.0 \/\u00a0<a class=\"owner-name truncate\" title=\"Go to Frances Ellen's photostream\" href=\"https:\/\/www.flickr.com\/photos\/francesbean\/\" target=\"_blank\" rel=\"nofollow\" data-track=\"attributionNameClick\" data-rapid_p=\"29\">Frances Ellen<\/a><\/em><\/span><\/p>\n<p>Another Hanoi specialty is <strong><em>bun cha<\/em><\/strong>. <em>Bun<\/em> \u2013 thick rice noodles \u00ad\u2013 is found all over the country, but this particular delight is made with pork, herbs, bean sprouts and pickled vegetables. Poured over the entire dish is the ubiquitous <strong><em>nuoc cham<\/em><\/strong>, which is a tasty dipping sauce usually comprised of fish sauce, lime juice, rice vinegar and garlic.<\/p>\n<p><em>Bun cha<\/em> is often topped with delicious deep-fried shallots that not only add a burst of flavour but give a lovely textural crunch, too, and is one of the many small ways that make Vietnamese food so appealing.<\/p>\n<h4>Vietnamese Pho<\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-5408 size-medium\" title=\"Vietnam Pho Bo\" src=\"https:\/\/www.expedia.com.my\/stories\/wp-content\/uploads\/2022\/07\/pho-bo-vietnam-800x529-1.jpg\" alt=\"Vietnam Pho Bo\" width=\"800\" height=\"529\" \/><span style=\"font-size: 8pt;\"><em>Pho bo \/ Getty Images<\/em><\/span><\/p>\n<p>Famous, delicious <em><strong>pho<\/strong><\/em> can be found throughout Vietnam, but is said to have originated in the northern region in the early 20th century. This rice noodle soup usually has a rich chicken or beef stock base and is made with Vietnamese basil, lime, bean sprouts and chillies. For the beef version, <em>pho bo<\/em>, the raw meat is often cooked in a hot pot at the table.<\/p>\n<p>&nbsp;<\/p>\n<h3>French Vietnamese Food in Hanoi<\/h3>\n<p><strong>The French influence is strong in Hanoi<\/strong> \u2013 it was the capital of French colony, Indochina, for the first half of the 20th century and this shows in the Vietnam food scene in the city. There are many French restaurants on offer in Hanoi,\u00a0and a widespread cafe culture.<\/p>\n<h4>Banh Mi (Vietnamese Baguettes)<\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-5409 size-medium\" title=\"Banh Mi Hanoi - Vietnam Food\" src=\"https:\/\/www.expedia.com.my\/stories\/wp-content\/uploads\/2022\/07\/banh-mi-hanoi-800x600-1.jpg\" alt=\"Banh Mi Hanoi - Vietnam Food\" width=\"800\" height=\"600\" \/><span style=\"font-size: 8pt;\"><em>Banh mi \/ CC by 3.0 \/\u00a0<a class=\"owner-name truncate\" title=\"Go to Yuko Honda's photostream\" href=\"https:\/\/www.flickr.com\/photos\/yukop\/\" target=\"_blank\" rel=\"nofollow\" data-track=\"attributionNameClick\" data-rapid_p=\"29\">Yuko Honda<\/a><\/em><\/span><\/p>\n<p>Its biggest legacy, however, has to be <strong><em>banh mi<\/em> <\/strong>(Vietnamese baguette), which are the perfect fusion of French and Asian flavours. <em>Banh mi<\/em>, served on many street corners as a quick and easy snack, is made with Vietnamese bread rolls, which are a mixture of rice and wheat flour for a lighter bread.<\/p>\n<p>The savoury filling is frequently pork, but sometimes chicken or tofu, with pickled carrots, daimon, fresh herbs and a distinctive, tasty <em>p\u00e2t\u00e9<\/em>. Next to pho, the baguette is among the most well-known and loved Vietnam food specialties.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-5065\" src=\"https:\/\/www.expedia.com.my\/stories\/wp-content\/uploads\/2022\/07\/food2-800x41-1.png\" alt=\"food2\" width=\"800\" height=\"41\" \/><\/p>\n<h2><strong>Food in Central Vietnam\u00a0<\/strong><\/h2>\n<p><em><strong>Major Influence: Ancient Vietnamese royal cuisine<\/strong><\/em><\/p>\n<p>The former capital city, Hue, is celebrated for its food, too, and is said to be influenced by the ancient cuisine of Vietnamese royals \u2013 it tends to be more decorative, with rich, complex flavours. This noodle soup is made with lots of lemongrass and usually both pork and beef for a rich, hearty stock. Both are made from turmeric-infused rice flour and are filled with prawns, pork, egg and bean sprouts.<\/p>\n<p>They\u2019re served with sweet and sour and peanut sauce and topped with aromatic herbs. A must-eat there is delectable <strong><em>banh bao banh vac<\/em><\/strong>, or white rose parcels, which are dumplings made with rice flour and filled with ground prawn meat. These are topped with crunchy garlic and served with a sweet dipping sauce.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-5065\" src=\"https:\/\/www.expedia.com.my\/stories\/wp-content\/uploads\/2022\/07\/food2-800x41-1.png\" alt=\"food2\" width=\"800\" height=\"41\" \/><\/p>\n<h2><strong>Food in Southern Vietnam<\/strong><\/h2>\n<h4><em>Major Influence: Thai and Cambodian<\/em><\/h4>\n<p>Ho Chi Minh City is a gourmet paradise. It\u2019s so cosmopolitan, you could eat a different cuisine there every night \u2013 French, Indian, Korean or Japanese, just for starters \u2013 but begin with the city\u2019s dazzling array of Vietnamese food, either in a restaurant or from one of the many street stalls throughout the city.<\/p>\n<p>The influences here are less Chinese and more Thai and Cambodian. Food tends to be sweeter compared to what\u2019s available in the northern region, but it\u2019s also spicier, with tropical fruits and coconut milk used more frequently.<\/p>\n<h3>Seafood along the Vietnamese Coast<\/h3>\n<p>With a coastline stretching over 3000km, Vietnamese cuisine is traditionally rich in seafood and this is very much the case in and around Ho Chi Minh City.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-5420 size-medium\" title=\"Ca Kho To - Vietnam Seafood\" src=\"https:\/\/www.expedia.com.my\/stories\/wp-content\/uploads\/2022\/07\/ca-kho-to-800x534-1.jpg\" alt=\"Ca Kho To - Vietnam Seafood\" width=\"800\" height=\"534\" \/><em><span style=\"font-size: 8pt;\">Ca kho to \/ CC by 3.0 \/\u00a0<a class=\"owner-name truncate\" title=\"Go to insatiablemunch's photostream\" href=\"https:\/\/www.flickr.com\/photos\/insatiablemunchies\/\" data-track=\"attributionNameClick\" data-rapid_p=\"70\">insatiablemunch<\/a><\/span><\/em><\/p>\n<p><em>Ca kho to<\/em> is a fish stew cooked and served in a clay pot. It can be found around the country but this Vietnam food specialty is particularly popular in the south. What originated as a peasant dish is now served all over Vietnam as a simple, filling snack. It\u2019s usually served with steamed pork and egg or barbecued pork and fried egg and is accompanied by pickled vegetables and, of course, <em>nuoc cham<\/em>.<\/p>\n<h4>Goi Cuon (Salad Rolls)<\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-5422 size-medium\" title=\"Goi Cuon - Vietnam Salad Rolls\" src=\"https:\/\/www.expedia.com.my\/stories\/wp-content\/uploads\/2022\/07\/goi-cuon-800x600-1.jpg\" alt=\"Goi Cuon - Vietnam Salad Rolls\" width=\"800\" height=\"600\" \/><span style=\"font-size: 8pt;\"><em>Goi Cuon \/ CC by 3.0 \/\u00a0<a class=\"owner-name truncate\" title=\"Go to Ron Dollete's photostream\" href=\"https:\/\/www.flickr.com\/photos\/saucesupreme\/\" target=\"_blank\" rel=\"nofollow\" data-track=\"attributionNameClick\" data-rapid_p=\"30\">Ron Dollete<\/a><\/em><\/span><\/p>\n<p><strong><em>Goi cuon<\/em><\/strong>, or salad rolls, are served throughout Vietnam in different variations, but the Saigon ones are divine. These are fresh rolls served in rice paper, often stuffed with pork or prawns or both, as well as herbs and vegetables and dipped in <em>nuoc cham<\/em> or a rich peanut hoisin sauce.<\/p>\n<p>The fried spring rolls, <em>cha gio<\/em>, are filled with ground pork, prawn or chicken and noodles, fungus and other vegetables.
